One of my "foodie dislikes" is under-done hard boiled eggs - where the yolk is still runny. Ughhh! I need nice, firm, hard egg yolks to really enjoy it - and I do love hard boiled eggs. As a pastry chef, I don’t have to be told twice about the delights of angel food cake or, more generally about how much fat I can replace in baking by removing egg yolks. That’s just about the most common low fat baking technique out there. On the other hand, think of all those wasted, leftover egg yolks! Up to now, the alternatives to such waste were powdered egg whites, frozen egg whites, or egg substitutes such as Egg Beaters. The drawbacks? The first is not a fresh product, the second is readily available only commercially and the third contains additives, preservatives, gums, and coloring. Eggology 100% pure liquid egg whites seem to have been invented to put my mind at rest on that waste – not, want – not score. How good and fresh are these bottled egg whites? According to Brad Halpern (“Chief Eggsecutive”) of Eggology, Inc., a commercial egg – separating facility based in Westlake Village, CA, they are shipped within hours of being laid and are handled as soon as they get to the processing facility. I tested Eggology Egg Whites on different types of egg white omelets – and each one was light and fluffy. And I liked the time savings: no cracking – one less kitchen task. As a pastry chef, up until now I had two options if I didn’t want to waste a lot of egg yolks when making macaroons or meringue. The first was powdered egg whites (nice, but not a fresh product) or egg substitutes (not nice, with additives and preservatives). Now I have Eggology: pasteurized liquid egg whites that, in a way, are fresher than eggs at the grocery store because they’re processed only hours after being laid. After pasteurization, these whites are thoroughly tested for salmonella, so I know I can use them safely in royal icing for my kids’ cookies or in a healthy smoothie for myself. When I got my first containers of Eggology egg whites, I went crazy making egg – white omelets (very light and fluffy), swirling the egg whites into simmering broth for egg drop soup, and testing my recipe for Passover macaroons. 11/2 cup pasteurized egg whites (such as Eggology) in closed oven for at least 24 hours. Drain the raspberries, reserving ¼ cup liquid. Place raspberries in a food processor, and process until smooth. Press raspberry mixture through a fine sieve into a bowl to measure 1 ¼ cups. Discard solids. Stir in the reserved raspberry liquid. Spoon cooled meringue into bowls. Drizzle with raspberry mixture, and top with whipped topping. Yield: 16 servings (serving size: about 1 cup meringue, 1 ½ tablespoons whipped topping.)

Surely my husband had dozens of reasons for proposing marriage 22 years ago. But my Mocha Cinnamon Soufflé is the one he remembers when he complains that I haven’t served his favorite chocolate dessert in 15 years. The tall, airy, chilled mousse is made with chocolate, coffee, cinnamon, whipped cream and – here’s the culprit – beaten egg whites. The soufflé is refrigerated, not baked, so when everyone began to worry that raw eggs could harbor salmonella, I stopped making it and every other recipe that used uncooked eggs. The recipe – now so old I can’t remember what magazine it came from – lay unused. Until now. Eggology, a California company, has developed heat-pasteurized liquid egg whites that work exactly like ones from the shell. So they’re safe to use any way you like. “The only thing we do, once we break the eggs, is test for salmonella and pasteurize them. They stay fresh in the refrigerator for up to four months, even after the container is opened,” says Eggology chief executive Brad Halpern. They’re convenient for cooks who often replace some of the whole eggs with additional whites in baked goods or other dishes. And they can be frozen and thawed without damaging their taste or texture, Halpern says. Eggology liquid whites should be in Detroit-area supermarkets this summer. What is your opinion about using liquid egg whites in desserts that call for many egg whites? I often feel guilty about throwing away a bunch of yolks. We purchased three widely available brands of pasteurized liquid egg whites – Papetti Foods All Whites, Eggology 100% Egg Whites, and Egg Beaters Egg Whites – and tested them against regular egg whites in four recipes: angel food cake, baked meringues, Italian meringue frosting, and scrambled egg whites. The Papetti Foods and Eggology products contain just egg whites; Egg Beaters contains small amounts of xanthan gum and triethyl citrate, which, according to the label, “enhance whipping.” Each sample varied in the amount of time it took to whip up to soft and stiff peaks (sometimes taking up to three times as long as fresh whites, even when beaten at a higher speed). Of all three brands, the cloudy-looking Papetti Foods product (which, to its credit, is labeled “not recommended for meringues or angel food cake”) was the least consistent, needing the most time to whip up and only occasionally achieving stiff peaks. In contrast, Eggology was mostly on par with fresh egg whites. The egg beaters fell somewhere in between. In all four applications, the Papetti Foods and Egg beaters products failed to perform as well as Eggology. The Papetti Foods almost always deflated into a soupy mess after other ingredients were whipped or folded in, rendering any application except the scrambled egg whites an abject failure. The Egg Beaters produced decent meringues but had a chemical aftertaste when scrambled. Overall, Eggology was the best, with the meringues and scrambled egg whites tasted identical to the real thing.

For Years, FOODday avoided publishing recipes with raw eggs (dressings, mayonnaise, and whipped desserts) and cautioned readers that such recipes were unsafe. That’s because uncooked eggs may contain salmonella bacteria that can make you sick.

Pasteurized eggs in the shells, a good alternative, are no longer available at Trader Joe’s, but many groceries carry Eggology – fresh pasteurized egg whites. You can find them in the refrigerated section with the eggs or in the dairy case. Pasteurization heats the egg just enough to kill bacteria but not cook the egg whites. No preservatives, coloring, or gums are added. The product is kosher. Regular eggs may contain salmonella, which develops in chickens and is passed on to the eggs when it’s laid. Cooking eggs destroys salmonella. Although the risk of getting salmonella is relatively low, the resulting intestinal infection can be dangerous, especially for the young, the elderly and those weakened by illness. Most healthy people recover within four to seven days, but infection can lead to sever or even fatal illness. Egg whites are nutritious. They have no fat or cholesterol and only 17 calories per white. Each one has 3 ½ grams protein. Liquid egg whites are easy to use because you don’t have to crack or separate eggs, or worry about getting specks of yolk in the white or using up the yolks. Most grocery stores sell the 16oz, square, plastic container, with 18 egg whites. They also come in larger sizes, which are available directly from the company. As a rule of thumb, there are approximately four to five egg whites per each ½ cup of liquid egg whites. One egg white equals 1 ounce or 2 tablespoons. The egg whites (opened or unopened) will keep three to four months in the refrigerator. After two months check the aroma for freshness before each use; discard if there is any odor. The normal aroma of fresh whites resembles an Eggy or dairy smell. Refer to the use by date on the container. You can freeze and refreeze the egg whites, even after the container has been opened and partially used. Unlike the yolks, the whites can safely withstand various temperature changes without altering taste, texture or quality. Defrost in the refrigerator. Shake lightly before using. You can also freeze them in ice – cube trays, using 2 tablespoons to equal 1 egg white Defrost in the fridge before using. If you are using egg whites to lower cholesterol and fat in a recipe, use two egg whites instead of one whole egg. Or use three egg whites and one yolk instead of two whole eggs. If a recipe calls for more than two eggs, using a whole egg with egg whites is a better choice because substituting too many egg whites for whole eggs will make a cake tough and rubbery. You can also make egg white omelets that are cholesterol free, high in protein, and low in fat. Because the whites do not have as much flavor as the yolks, add vegetables and herbs or serve with a sauce.

Perhaps I don’t have enough to do, but with the coming of spring I’ve been whipping up clouds of dreamy egg whites and wondering what it would be like to drink a tumbler raw. I’m not going to try it, and I can’t find anyone who will put my curiosity to rest. Carolyn: Eggology is one company’s attempt to make eggs a healthy on-the-go snack like yogurt. I got a kick out of the carton copy saying they are “convenient for the car.” (We’ve all heard that cars may someday contain microwaves, but I have yet to ride in such a car.) Eggology’s “eggs in a microwavable cup” is still a great idea and great technology that really works. Break open the top seal, cook in the microwave for 95 seconds, and the viscous liquid turns fluffy white, popping the lid open in the process. But many of the qualities that make Bonnie such a big fan of these – they’re organic, all natural and contain no yolks – severely limit Eggology’s potential market. I’d obviously like to see a version of these that are nonorganic – and therefore cheaper – using whole eggs, perhaps with an attached bag of Bac-Os to up the flavor interest .
