Why egg whites? The answer may depend on what you’re trying to achieve, but most often the answer to this question is, egg whites are pure protein and have no fat, no cholesterol, no trans fats, and no carbohydrates.

Egg Whites provide the only protein that is instantly absorbed by the body. EGGSecution of the ultimate food safety
EGGOLOGY... uses multilayer policies and procedures for achieving the ultimate food safety. We certify all vendors by our own highest food safety criteria. We utilize H.A.C.C.P. (Hazard Analysis Critical Control Program) which was created for NASA as the ultimate in food safety for the space shuttle. This program provides layers of food safety identification & controls with repeated and recorded checks.

EGGOLOGY... is a USDA facility whereby a USDA/FSIS inspector is present in our facility every minute of production. See (Eggsplain USDA) for more info. Our facility is continually audited by the certifying agency for organic foods – CCOF (California Certified Organic Farmers), who assure all organic standards are met and also audit the entire trail from chicken feed to delivered consumer product.

EGGOLOGY... is a kosher facility, with all aspects of our products and operations upheld by kosher standards and continuous inspection. Our egg whites are certified using the Heart-k Parve seal, and our ice cream utilizes the CK Dairy seal, with supervision overseen by Rabbi Teichman. EGGOLOGY... egg whites and other egg products are pasteurized, a USDA regulation for all eggs outside the shell. This process heats eggs to approx 131 ºF while moving at an accelerated rate through stainless steel tubes. However, pasteurization alone does not make eggs safe to drink raw because, in order to kill harmful bacteria such as salmonella, the eggs must be heated above 174 ºF which would result in the solidification of the eggs. Therefore, the only way to verify that the eggs are safe is for continuous lab testing and EGGOLOGY... does just that — and we’ve never had a positive test result for salmonella or any bacterial testing. That’s why EGGOLOGY... has its own laboratory designed, certified, trained by and maintained by Biomedix, the same company that provides state-of-the-art lab testing to the U.S. Military and many prominent food manufacturers. For testing verification we utilize Silliker labs which is a USDA approved lab.

As a safeguard for consumers who use EGGOLOGY... egg whites in raw form, we repeatedly test for salmonella, listeria, ecoli, TPC, along with a wide array of other harmful bacteria. While the USDA minimum requirement for testing is 1 in every 8 production days, EGGOLOGY... egg whites and our other egg products are tested repeatedly everyday to insure absolute safety.

EGGOLOGY... products do not contain any hormones, antibiotics, or GMO’s (genetically modified organisms) and additionally, our Cool Cravings ice cream does not have rbST (Bovine Growth Hormone) found in most other ice creams. We continually test for extended shelf life proving that our product will remain for the time period stated on the package. In this process, we keep samples from production every single day, and at the end of the term (e.g. 4 months), we open it and test for salmonella, listeria, and an organeleptic test. Additionally, we open one sample each month to check aroma (organeleptic) performed and documented in the presence of the USDA inspector. In this way, a sample that does not pass any of the testing may result in a total recall of that LOT#. EGGOLOGY... has never had a recall.

EGGOLOGY... tracks every product from start to finish. Every lot number provides information including: origin of each packaging component (from label to safety seal), origin and all production aspects of product and/or ingredients, temperatures from every level of production, and the identification of every EGGOLOGY... team member who oversaw its production and its destination.

EGGOLOGY... production team members wear head-to-toe sanitary garments including gloves and boots. They may not wear jewelry or perfume that could compromise the product, all team members must have pristine personal hygiene, and all are required to sanitize their hands every 30 minutes, and at any time when returning to the product line. To ensure that product safety is our number one priority, we randomly swab team members’ hands and test for bacteria limits.

As a federally supervised food plant EGGOLOGY... now falls under the “Bioterrorism Act” that has added many new procedures, and yet another layer of security over our foods and facility. EGGOLOGY... egg whites and egg products are packaged in a recyclable plastic bottle with both an inner freshness seal, and outer safety seal. Unlike bacteria prone cartons, our sterilized bottles thwart the growth of bacteria and provide a perfect dispenser for both ladling and pouring.

We do not offer a pumping or dispensing device because it would allow a flow of oxygen into the product which can act as a breeding ground for potentially harmful bacteria. Also, because such devices often utilize a metal spring that comes in contact with the oxygenated product.

The key to our freshness and safety is temperature! We continuously monitor and document temperatures at every level of production, including truck trailer temperatures that leave our facility loaded. Temperatures are tested and documented, with guidelines met prior to all deliveries of EGGOLOGY... product.

EGGOLOGY... is a USDA certified food production facility under federal supervision, performing our production under the strictest of guidelines. There are no grey areas in food safety so that every master shipping case is inspected and fully screened before receiving an inspector stamp of EGGSellence and identifying the Q.C. who inspected it .

The following are just some of our food safety controls:

EGGSplain what “USDA Inspected & Approved” really means
Unlike FDA and county health inspectors that visit a food plant on occasion, EGGOLOGY... is a USDA continuously inspected facility which means we have a United States Department of Agriculture inspector in our factory every single work day for every hour we’re in production! This inspector observes every aspect of our production, and is constantly reporting findings to USDA headquarters, and additionally takes samples of EGGOLOGY... product to test for salmonella, listeria, and organaleptic quality. The USDA office in Washington, DC, now directly affiliated with the FSIS (Food Safety Inspection Service) is responsible for observing and testing all aspects of food safety in USDA facilities and also approves all EGGOLOGY... product labeling (see approval code located in the rectangle), in order to assure consumers there are no vague or misleading label claims.

EGGShausting separating eggs
Contrary to popular belief, EGGOLOGY... does not employ Oompa Loompa's to separate our eggs, but we do use machines similar to those used by Willy Wonka. At EGGOLOGY... , first the outside of each egg is thoroughly washed prior to breaking, then it is loaded onto a rotating stainless steel cup resembling a spoon. As it moves, the eggshell is struck and cracked perfectly, with centrifugal force causing each side of the shell to move up and away, the yolk falling to the right, and the white falling to the left. All eggs that do not break perfectly are discarded, as mandated and overseen by the on-site USDA Inspector.

EGGSpedient to be eaten
Scrambled or in omelets is the most popular, but EGGOLOGY... can be used any way you currently eat and use eggs. EGGOLOGY... is real egg whites, so they’re excellent for whipping or baking, can be substituted for whole eggs in almost any recipe to reduce fat and cholesterol of whole eggs without sacrificing. As with all eggs out of the shell EGGOLOGY... egg whites are pasteurized. The crucial difference is that our egg whites are repeatedly tested for salmonella so that chefs can be confident in using EGGOLOGY... for meringues, mousses, and royal icings; while bodybuilders safely use EGGOLOGY... in protein shakes, smoothies, or eaten raw. NOTE FOR THOSE DRINKING EGGOLOGY... RAW: the protein will assimilate best in the body if the egg whites are first shaken or blended.

EGGStraordinary, they can be frozen
Yes. In fact, you can place a bottle in the freezer even after it has already been opened and partially used. Unlike the yolk of an egg, the whites are versatile and safely withstand temperature changes without altering taste, texture, or quality. To defrost, we suggest placing the frozen bottle on a countertop overnight. EGGOLOGY... will still be cold in the morning, and defrosting to near room temperature will not affect egg whites. In the morning, shake well upon defrosting and refrigerate. EGGOLOGY... egg whites will not become watery like other brands that are not fresh.

EGGSciting how long they remain fresh
EGGOLOGY... egg whites are heat pasteurized, and will remain fresh for 4 months in the refrigerator (opened or unopened), because egg whites have no bacteria and that’s how long FRESH egg whites last! Our ON-THE-GO microwavable egg whites remain fresh for 3 months. After 2 months we recommend you check the aroma for freshness prior to each use — refer to the date on the top of the bottle and discard if there is any odor present. The aroma of fresh egg whites resembles an eggy or dairy aroma — when egg whites are bad there’s a distinctive odor. Furthermore, the “Best if used by” date holds true whether the bottle is opened or unopened.

Each egg varies in size and produces a different amount of egg white versus yolk. As a rule of thumb, there are approximately 4-5 egg whites to each 1/2 cup of liquid egg whites.

In addition to egg whites we also provide egg yolks to companies that make salad dressings, mayonnaise, and ice cream; and whole eggs to restaurants and bakeries.

EGGStra explanation of Salmonella
Contrary to popular belief, salmonella is not caused from non-refrigerated eggs. Salmonella is a (bad) bacteria which begins on a hen's feathers, and then as the hen cleans itself is passed into its intestines, and finally into the egg. Pasteurization heats the egg to approximately 130°F (any higher and the egg would cook), but heat won’t kill Salmonella until approximately 174°F. Therefore, the only way to check for salmonella is with laboratory testing. EGGOLOGY... performs continuous lab testing on all products for the presence of Salmonella.

EGGSplaining absorption and avidin
The protein of an egg white is the only protein available that is instantly absorbed by the human body without having to undergo the body’s natural breakdown process to extract the protein. While EGGOLOGY... egg whites are completely safe to consume raw, due to the molecular structure of an egg white, the benefits of the egg white protein are best received if the liquid is shaken prior to consuming.

The pasteurization that we perform using heat does allow that the Biotin is not inhibited. Once the product has been heated, then the binding effect of Avidin is no longer an issue. You would have to consume 24 raw egg whites in one sitting for the Avidin to have any effect on the Biotin. EGGSellent animal rights, care & treatment
EGGOLOGY... applauds the efforts of animal rights groups and subscribes to the humane treatment of all animals. The following are a list of non-cruelty standards we adhere to:

  • Hens live and move freely in large community open-air hen houses.
  • No cages. Our hens have unlimited access to feed, water, and dirt for bathing.
  • Hens are fed a 100% certified organic diet. Composed mainly of organic corn, organic alfalfa, organic soy, organic salt & limestone.
  • Hens that become injured for any reason receive immediate attention from an onsite poultry specialist to determine if the injury requires isolation for healing, or that the severity of injury will incur undo suffering in which case the hen is humanely euthanized.
  • Hens that die are cremated on the ranch to prevent any potential for disease.
  • Hens are not de-beaked.
  • Hens are purchased at Day-1 of age, thus we only house female chicks.

EGGOLOGY...  is proud to be Certified Humane and once again leading the way of offering products that far exceed standards of purity, freshness, quality, and social consciousness.

The following criteria are regulations adhered by EGGOLOGY..., as per the Animal Humane Farm Care (Certified Humane).

Free-Range Requirements
The Animal Care Standards for laying hens do not require that hens have access to range.  When range is provided, the following standards must be met.

Outdoor area -The outdoor area in free-range systems must be designed and managed to ensure that the land around the house does not become damaged, contaminated, or sodden.  Chickens with access to range must have access to a well-drained area for resting while outside the building.
Exits - Hens kept in free-range systems must have sufficient exit areas appropriately  distributed around the building to ensure that all hens have ready access to the range, and each exit area must allow the passage of more than one hen at a time. 

Dust-bathing area - If the dust-bathing environment for free-range hens is only provided outdoors, the hens must have access to this area for at least 4 hours every day.  Outdoor dust-bathing environments must have a substrate suitable for the performance of dust-bathing behavior.

Vegetative cover for range area - In free-range systems, a cover of living vegetation should be maintained over the grazing area, with active management of damaged ground.  Land used for cropping (except grass or hay) is not regarded as acceptable vegetation and must be excluded from calculations for grazing space allowance.

Size of range area - In systems where birds are primarily managed on range, the minimum space required is 2.5 acres for every thousand birds.  The perimeter of the range should be within 400 yards of the house.  If rotational grazing is used, a minimum of 1/6 of the total range area should be should be available at any one time.

Parasite control - When there is a risk of build up of parasites or pathogens on free-range land, rotational grazing or other disease control measures must be applied.

Overhead cover - Hens in free-range systems must have access to overhead cover to reduce regular fear reactions to overhead predators. 

Shelter - To protect hens from excessively cold temperatures or other adverse weather conditions, a shelter must be accessible that is of sufficient size to accommodate all hens.  The shelter must also provide sufficient protection from wind, rain, and snow. In areas where excessive heat may be a problem, a shaded area that has sufficient space so that hens do not have to crowd together, risking further heat stress, must be
accessible to the birds.

Beak Trimming
HFAC is aware that there is some confusion regarding the difference between beak trimming and debeaking.  We do not under any circumstances allow debeaking; there are, however, humane reasons to allow beak trimming of laying hens, as long as it is practiced according to strict guidelines.  It is accepted that in colony housing systems there is a great risk of outbreaks of cannibalism.  The pain and suffering of the hens that are being pecked to death is appalling and may quickly affect a large proportion of the flock.  HFAC allows minimal beak trimming in order to avoid heavy feather pecking and cannibalism among laying hen flocks.  Feather pecking can occur in flocks of any size, and in any production system.  Cannibalism is more common in large flocks (flocks of over 60-120 birds) but can also occur in flocks of any size.  Cannibalism is more common in non-cage than cage systems.  Early studies showed that hens that were beak-trimmed at 12-16 weeks of age experienced chronic pain after trimming.

However, in 1997 Dr. M.J. Gentle of the Roslin Institute in Edinburgh, UK, conducted research that showed that, although chicks beak-trimmed before 10 days of age may experience short-term pain, they do not experience the longterm pain that was associated with trimming chicks at ages older than 10 days.  Our standards require that, if chicks are to be trimmed, the trimming must occur at 10 days of age or younger. Further, the trimming can only be carried out by trained and competent operators using approved methods. Only the tip of the upper part of the beak may be removed, in order to limit the hens’ ability to tear at flesh without inhibiting feeding, ground pecking, or preening. The lower mandible may be “stopped” (e.g., heat treated) without any beak being removed in order to avoid distortion of beak formation in later life.  HFAC is currently reviewing new research regarding possible improvements in beak-trimming methods.  If these methods offer an even more humane and practicable alternative to our current requirements, wewill amend the Animal Care Standards accordingly.

Cages Are Prohibited
Industry standards allow hens to be confined in cages and do not require nest boxes, perches,or dust-bathing areas. This kind of confinement, which Humane Farm Animal Care does not permit, does not allow birds to engage in natural behaviors and can contribute to bone weakness and injury. Furthermore, the resulting lack of space does not allow birds to escape aggression from other hens.

Nest Boxes Required
HFAC’s Animal Care Standards require that laying hens be provided with next boxes. The nest boxes must have a floor substrate encourages the hens’ natural nesting behavior.  A nest box provides a hen with a secluded place in which to lay her eggs. Hens are very strongly motivated to build a nest prior to laying their eggs, and the Animal Care Standards require that the producers use nest boxes that provide a substrate that encourages the hens to perform this behavior.

Attractive nest boxes also mean that hens do not lay their eggs on the floor or ground, where the eggs can become cracked or dirty.  See the fact sheet on Laying Hens Housing Systems for more information about environments for laying hens.

Housing Systems
HFAC’s Animal Care Standards allow barns as housing systems for laying hens. A number of requirements, including the ones below, must be met by such systems. HFAC does not allow cages in any of its housing systems.  All hens must have sufficient freedom of movement to be able, without difficulty, to stand normally, turn around, and stretch their wings; they must also have an environment that supports natural behaviors such as dustbathing. All birds must have sufficient space (including perches) to be able to perch or sit quietly without repeated disturbance. Minimum space and perch allowances for different housing systems are detailed in the HFAC Animal Care Standards for laying hens.
